Pajarito Tradicional tastes powerful, strong and intense, with pronounced roasted and smoky characteristics that come from the traditional barbacuá smoke-drying method. The flavour profile carries roasted aromas, coffee and toast notes, undertones of tobacco and an oaky, herbal character, balanced by a surprising nuttiness and a light sweetness in the finish. The aroma is woody with subtle hints of hay, buttery nuances, sweet caramel shades and light notes of candyfloss, giving a mild, somewhat restrained but genuinely complex aroma.
About the producer
Pajarito is Paraguay's best-selling yerba mate brand, founded in 1956 by Lauro Raatz and his wife Sara Ulbrich on the old yerba mate plantations of Don Gustavo Raatz. The brand grew from hand-powered drying installations and manual packing teams of 25 women into a producer of 15,000 packs a day, exporting to more than 47 countries worldwide.
How do you drink Pajarito Tradicional?
Pajarito Tradicional is prepared the same way whether you drink it hot or cold: fill a traditional gourd (mate) or horn cup (guampa) two thirds with the smoke-dried yerba, pour in hot water (70-80°C for mate caliente) or cold water (for tereré), place the bombilla and drink. In traditional Paraguayan preparation, fresh herbs such as mint or lemon verbena are often added to the water for tereré.
