Rosamonte Despalada tastes surprisingly approachable for a sin palo version: quite unusual for Argentinian yerba mate, with an oily aroma reminiscent of extra virgin olive oil, bitter-savoury notes and earthy, plummy undertones with minimal smokiness despite the barbacuá drying. The flavour profile is nicely balanced between bitter and sweet, with notes of olive oil, a touch of tobacco, black tea and subtle herbal and woody nuances. The powerful but pleasant bitterness is well balanced by sweetness, giving a relatively straightforward mate with a quick finish that invites a brisk drinking pace.

Rosamonte Despalada is produced using Rosamonte's signature barbacuá drying method, followed by 12-18 months of ageing, which develops complexity while softening the sharpness. How do you drink Rosamonte Despalada?
Fill your gourd about two thirds with Rosamonte Despalada, tilt it and add lukewarm water down the sloped side. Then add hot water at 70-75°C (temperature control is essential; precision gives the best flavour balance and the longest session). Refill with hot water; you will get 20-25 refills with energetic flavour. The flavours develop less dramatically over the session, but the consistent quality and the perfect morning energy make this variety more than worth it.
It is said that the Paraguayan Yerba Mate has fans especially among people who like its typical bitterness. Paraguayans mainly drink strong and dusty yerba mate with a robust bitter aftertaste. How do you drink Union Hierbas Serranas?
Prepare Serranas with the standard mate method: fill your gourd three quarters full, add lukewarm water and then hot water at 70-80°C. This mate is particularly well suited to cold tereré (recommended), where the mint flavours and the cooling effect come into their own perfectly in warm weather. The herbal cooling character combines excellently with ice. You can also use the French press method: steep 1-2 tablespoons per cup for 3-5 minutes. The mint flavours become more intense with hot water extraction, and the flavour holds up across multiple refills throughout your whole session.
